DINING CENTER DAILY ROUTINE

For example, you may wish to post a “Dining Center Participants Sign Up List”.

BEFORE THE MEAL

Check the “Congregate Meals Report Monthly Reservation/Attendance Sheet” to determine the number of diners to expect. Set the tables, placing a donation envelope at each place setting.

Count yesterday’s cash donations. Complete the “Daily Contributions” sheet. Place this with the cash in the locked bag for pick up.

Prepare a meal order for tomorrow. Use the Meal Order Sheet. Send this to the kitchen in the brown accordion file. Keep the yellow copy for your record. Order diet exchanges as necessary for diabetic meals. Wednesday’s order must include the frozen meals. Call in tomorrow’s meal changes by 12:30 today.

Take care of any mail or other communication in the blue accordion file.

Greet and enroll new participants.

Prepare the coffee, but not earlier than 15 minutes before meal is to be served. Highland Valley is able to provide only enough coffee for participants to consume with the meal.

UPON DELIVERY OF FOOD

Take food temperatures and record them on the Portion Control/Food Temp Record form.

Tables must be preset with milk, salads, deserts, etc. This task should be the responsibility of participants.

Complete the column marked “Actual (sent)” on the Meal Order Sheet.

Dispatch home delivered meal drivers.

Transfer bulk food to pre-heated tables.

Order needed supplies. Use the “Inter-Office Communication” form and/or the “Meal Order Sheet” as appropriate. Send forms to Highland Valley in the blue accordion file.

The Dining Center meal is served at approximately 11:45 AM. Questions about the timing of meals should be addressed to the Nutrition Site Council.

AFTER THE MEAL

Collect and secure cash contributions, including those submitted by drivers.

Clear tables and sanitize them. Wash dishes and utensils. Clean and sanitize the kitchen. Store food supplies, empty and wash trash receptacles and coffee makers, etc.

Update the following: “Congregate Meals Report Monthly Reservation/Attendance Sheet”. Send this in the blue accordion file by the 5th of the following month.

On Monday of each week, send the five yellow copies of the Meal Order Sheet from the previous week. Send these to the kitchen in the blue accordion file.
